These goji berry energy balls are a delicious dessert or energy pick-me-up. Goji berries are also a superfood, high in antioxidants such as zeaxanthin and plant phytochemicals such as beta-carotene. The benefits of eating them range from eye health, immune support, mood-boosting effects and stabilizing blood sugar.
Ingredients
2 tablespoons (20g) dried goji berries
½ cup (100g) pitted dates
1/3 cup (35g) toasted pistachios
3 tablespoons (5g) puffed millet or other grain
Pinch of salt
Freeze dried strawberries or rasberries (optional)
Directions
Rehydrate the goji berries in 2-3 tablespoons of boiling water for 5 minutes.
Add the dates and pistachios to a food processor or chop them by hand. Add the goji berries, puffed millet, and a pinch of salt and mix. Break off a piece of the “dough” and roll it into small ping-pong-sized balls. For extra pazzazz, grate some freeze-dried strawberries or rasberries on top. Store in the fridge.
